Knights in GBAFE just need slightly better HP, ATK, SKL and DEF and better maps. You can still have Seize or Rout maps, just have a lose condition of your base(s) getting seized as well so that there’s a defence element to it.
Better enemy quality also does help (aka what most games ought to be doing anyway).

I played a hack that I think did something interesting. Your armors have 5 move, but enemy armors still only have 4.
If the idea is minimalistic change with no skill addition. Give them full access to weapon triangle and a slightly higher statline. Pair that up higher enemy quality and you have a class that can act as a lightning rod on enemy phase
