I can’t think of any characters I like because they use lances (honestly they’ve always been my least favorite weapon type personally), but my favorite lance user is Florina. She’s currently the only FE character I’ve made a video essay on why I like (Ilios will get his spotlight one day).

I don’t really know much non-FE media with characters who fight with lances, but I remember this one Chinese “anime” series where the MC dual-wielded lances and I thought that was really cool. Don’t remember the series though, I stopped watching a few episodes in
As for FE characters it’s just Ephraim. I think he’s cool as hell.
Lancelot, it’s literally in his name. He’s also more famous than all the FE roster combined.
