Alternative Leveling up

You could limit how much you level a stat. EX. you can level str once every 3 levels, skill every 2 levels, etc.
if you were to not level a stat and its over the level requirement you can save it for future levels. but this might only be viable with +3 stats a level

I think something like the Mario and Luigi series would be nice, where you level up with your regular growth rates and once they happen you get to give a +1 to whatever stat you’d prefer, with some incentive so that you don’t choose the same stat over and over.
